Traditional Balsamic Vinegar DOP of Reggio Emilia, Bollino Aragosta (lit. lobster seal), is produced by cooking grape must coming from selected vineyards of the province of Reggio Emilia only. After a phase of acetification, it is refined and aged in casks for at least 12 years, thus undergoing the judgment of master tasters who give it their own classification. To be used on raw ingredients.
